One-Pot Sausage and Veggie Rice Skillet
A budget-friendly, flavourful, and easy one-pot meal featuring common Canadian grocery store ingredients.
Ingredients
- 300 g Mild Italian sausage — casings removed
- 1 Large onion — diced
- 2 Carrots — peeled and diced
- 2 Celery stalks — diced
- 2 Garlic cloves — minced
- 250 mL Uncooked long-grain white rice — rinsed
- 500 mL Chicken or vegetable broth
- 1 can Diced tomatoes — 398 mL, undrained
- 15 mL Olive oil
- 5 mL Dried oregano
- 2 ½ mL Dried thyme
- Salt — to taste
- Black pepper — to taste
- 125 mL Frozen peas
- 60 mL Fresh parsley — chopped, for garnish

Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Add the sausage (casings removed) and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain excess fat if necessary.

Add diced onion, carrots, and celery to the skillet. Sauté for 5-7 minutes until vegetables begin to soften. Stir in the minced garlic, oregano, and thyme, cooking for another minute until fragrant.

Stir in the rinsed rice, coating it with the pan drippings and spices for 1 minute.

Pour in the chicken or vegetable broth and the undrained diced tomatoes. Stir well to combine, scraping any browned bits from the bottom of the pan.

Bring the mixture to a boil, then reduce heat to low, cover the skillet, and simmer for 18-20 minutes, or until most of the liquid has been absorbed and the rice is nearly tender. Do not lift the lid during this time.

Stir in the frozen peas. Cover again and let stand off the heat for 5 minutes to allow the peas to warm through and the rice to finish absorbing any remaining liquid.

Fluff the rice with a fork. Season with salt and pepper to taste.
