Ingredients

  • 4 fillets salmon (skin on, ~150 g each)
  • 1 head broccoli, cut into florets
  • 3 tbsp pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 2 cloves garlic, grated
  • 1 lemon, sliced
  • Salt and pepper

    Preheat oven to 220°C (425°F). Line a sheet pan with parchment.

    Toss broccoli with 1 tbsp oil, salt and pepper. Spread on pan and roast 8 minutes.

    Whisk maple syrup, Dijon, remaining oil, and garlic.

    Push broccoli aside, nestle salmon on the pan and brush generously with glaze. Top with lemon slices.

    Roast 10–12 minutes until salmon flakes and reaches 63°C (145°F).

  • Use real maple syrup — pancake syrup will burn.
